Roasted Veg!

Roasted Vegetables,

Easy and simple seem to be a theme here. We have Roasted Vegetables in my home at least a few times a week. You can eat them with just about anything. They also make the best left overs, you can always make a couple of trays up and have lots for leftovers during the week.

Doing tray of vegetables up like this is a great way to get everyone eating lots of different varieties of vegetables in one meal. My trays are always different because I will use whatever is in the fridge and sometimes the freezer.

Pre-Heat Oven to 425°

Chop all the vegetables about the same size pieces, put into a large bowl, add a few Glugs of Olive Oil ( I use around 2-3 Tbsp) mix all the vegetables and oil so everything is coated.

Now spread nice and even onto parchment lined baking sheets.

Sprinkle with some Sea-Salt, Pepper and Thyme. Thyme is my favorite herb, I will pretty much add it to most meals and soups that I make.

In this batch I had of veggies I had:

5 Potatoes

2 Onion

1Red Pepper

2 Parsnip

4 Carrots

I usually will add some broccoli and Brussel sprouts too because My son Loves them. (yes I realize how lucky I am)
