Vegan Scalloped Potatoes
Warm, flavourful and delicious. Same look and great taste without the Dairy products. This weekend I needed a dish that was Vegan and left everyone wanting more. Most people would be amazed at just how easy it is to make meals Vegan. Unless you tell them its Vegan, I doubt they would know!
These Vegan Scalloped Potatoes would be great for a potluck as it would travel very easily. You can also pair this side dish with load of roasted vegetables, soup or a salad. Sprinkle some Nutritional Yeast , (click here to read my Vegan Pantry items) on top for a great cheesy flavour if you like.
It is an easy dish but it does take a little while to cook but it is well worth the wait! The next time I make it I am going to double it, It would be great for leftovers.
Here is what you will need:
4 Tbsp Vegan Butter
2 Tbsp Flour
1 finely diced Onion
1 Tsp Salt
1/2 tsp Pepper
2 1/2 cups of milk (I used ALMOND MIlk)
6 peeled Potatoes sliced thinly
Pre-heat Oven to 350, heat a saucepan on medium heat add your butter, once melted add in your onions and let them sweat for 5 min or until tender and add you salt and pepper. Now add flour and stir together making a nice roux. Pour in your milk, leave on low to med heat while constantly stirring, once mixture starts to simmer remove from heat for a min or so.
Take a 9×9 casserole dish and grease it with some butter. Start to layer, 1st potato layer then some mixture then another potato layer etc.. make sure to end with a layer of sauce.
Place in the oven and cook for 30 min covered. When 30 min is up remove foil and continue to cook for 1 hour.
Take out of oven and let “set up” for 10 minutes before eating.
