Chickpea Curry, 10 Min

Lots of flavour packed into a very easy 10 min meal. This is a very basic curry type dish that anyone can do. This was another day where it was almost supper time, everyone was hungry and I had not grocery shopped for much because we are going away and I don’t want to keep much fresh food in the house to go bad.

This dish did not lack any flavour, it was amazing! I paired it with some roasted potatoes but you could use rice and some Naan bread, yum!


So here’s what I used and how I did it.

In a pan heated with Oil add

1 onion diced

1 yellow pepper diced

And let cook for 2 min then add

1 garlic clove finely chopped

1 large Tbsp Curry Powder

1/2 tbsp ginger powder ( or fresh)

1/2 tsp pepper flakes

1/2 tsp salt

1 can Full Fat Coconut Milk

1/2 cup veg broth

1 can chickpeas

1 cup frozen mix veg

Let all of this simmer at a low heat for 8 min or so, check and stir to make sure nothing sticks to the bottom.

Have a taste to see if it needs any extra seasoning!

A few potatoes boiled and then roasted with Olive oil for a few min in the oven pre-heated at 450.

There it is. Easy, 10 Minutes.
